Grill up a whole wheat low-carb tortilla
Warm up some fat free refried beans and a tablespoon of taco seasoning, I add some water to make it a little thinner
Add some hot pepper cheese, tomatoes, and fat free sour cream
Mmmmmm!
Not quite as "quippy" as my husband, but I figured "Hey, everybody else is doing it" and "Yes, mom, I would jump off a bridge. . . "

I am going to eat this this week for lunch. And so are my kids. This is so simple and I bet it's awesome!
